Baked French Toast

2 loaves french bread (cut 1/2 "slices")
6 eggs
2 c. milk

1. Combine eggs and milk
2. Soak french bread in egg mixture.
3. Put on Jelly roll pan that has:
1/2 c. butter (melted)
2/3 c. brown sugar
1/2 tsp. cinnamon
4. Refridgerator overnite.
5. Bake 350 degrees for 20-30 minutes.
6. Flip over to serve.

The Coconut Monkey

1 Pineapple Juice
1 Orange Juice
1 Blue Curacao
1 Amaretto
1 Soda/Tonic
1 Coconut Milk
2 Rum (White)
2 Absolut
1 Tequila
1 Gin
1 Jim Beam
1 Midori

American Bounty Cobbler (Peach)

6 servings-2pts each

3 cups peeled, pitted & sliced fresh peaches
1/2 cup sugar
1/8 tsp ground nutmeg
3/4 cup flour
1 tsp. baking powder
1/2 cup fat free milk
1 large egg
1 tsp vanilla

Preheat oven to 350 degrees. Spray 8-inch square baking dish. Combine the peaches with 1/4 cup sugar and nutmeg in a medium bowl, toss until evenly coated. Let peaches sit for at least 20 minutes while preparing the batter. In a lareghe bowl, stir together the flour baking powder, and remaining sugar. In a medium bowl, blend the milk, egg, and vanilla. Stir milk mixture into the flour mixture until dry ingredients are evenly moistened and batter is smooth. Transfer the fruit to the baking dish. Spread batter over the fruit. Bake until the topping is brown and springs back when touched, about 30 minutes. Let rest 30 minutes. Serve warm or at room temperature.

Ice cream and chocolate cake, no frosting

My birthday is coming up and Melissa got a cake. I just wanted to make sure everyone knew how to properly eat ice cream and cake. It is very simple, take the ice cream and chocolate cake and place it into a bowl. No frosting, ever. Next mix and mix and mix until you reach a soft serv consistency with the chocolate cake mixed in as tiny bits of cake. Enjoy. There is no other way to eat ice cream and cake.

Tomato Mince Pie

1/2 cup of sugar
1/4 cup of flour
1 jar (quart) green tomato mince

Mix ingredients. Pour into 9" pie shell. Cover with second shell. Bake about 45min. at 350 degrees, or until brown.

Samantha's Guacamole Recipe

I got this recipe from a guy at work. It is apparently his daughter Samantha's. All the spices and liquids are estimates (she doesn't use measuring cups).


8 Avocados
1 Red Pepper, diced - set a small amount aside
1/4 Large Red Onion, diced
8-10 Green Onions, chopped
2 Tbsp Fresh Cilantro, chopped
1-3 Whole Leaves of Fresh Cilantro
1 Tbsp Sea Salt
1/2 Tbsp Black Pepper
1/2 Tbsp Tabasco
1/2 Tbsp Worstershire Sauce
2 Tbsp Lemon Juice
2 Tbsp Lime Juice

Cut avocados in half, remove pits (do not throw away pits), scoop out
insides (score avacado before scoping out and it will come out already
diced). Mash avocados. Mix in all ingredients, except red peper that was
set aside and whole cilantro. Put the extra red pepper in a pile centered
on the top and put whole cilantro on that as a garnishment. Place pits on
top of guacamole' and seal with plastic or an airtight lid (this will
prevent the guacamole' from browning too quickly).


Recipes from various places

I've accumulated some recipes of various things and I almost lost them due to a harddrive crash. I've improved my backup system but it go me thinking that I could dump them here since I can pretend their content. :-) I'll try and keep things clear as to what it is, how to do it, etc. In addition, if I remember where it came from I will let you know.
