Samantha's Guacamole Recipe

I got this recipe from a guy at work. It is apparently his daughter Samantha's. All the spices and liquids are estimates (she doesn't use measuring cups).


8 Avocados
1 Red Pepper, diced - set a small amount aside
1/4 Large Red Onion, diced
8-10 Green Onions, chopped
2 Tbsp Fresh Cilantro, chopped
1-3 Whole Leaves of Fresh Cilantro
1 Tbsp Sea Salt
1/2 Tbsp Black Pepper
1/2 Tbsp Tabasco
1/2 Tbsp Worstershire Sauce
2 Tbsp Lemon Juice
2 Tbsp Lime Juice

Cut avocados in half, remove pits (do not throw away pits), scoop out
insides (score avacado before scoping out and it will come out already
diced). Mash avocados. Mix in all ingredients, except red peper that was
set aside and whole cilantro. Put the extra red pepper in a pile centered
on the top and put whole cilantro on that as a garnishment. Place pits on
top of guacamole' and seal with plastic or an airtight lid (this will
prevent the guacamole' from browning too quickly).


Recipes from various places

I've accumulated some recipes of various things and I almost lost them due to a harddrive crash. I've improved my backup system but it go me thinking that I could dump them here since I can pretend their content. :-) I'll try and keep things clear as to what it is, how to do it, etc. In addition, if I remember where it came from I will let you know.

Star Trek

It was actually pretty good. I suppose I'm willing to overlook the time travel plot. Good casting. More action/adventure than regular Trek. The comedy seemed to work well and they were not ashamed of the random way they introduced characters. Too bad they blew up Vulcan. Hopefully, the sequels will be halfway decently written.

St John Vianney Community Festival

St. John Vianney had their parish carnival today so we took the kids. I was surprised how many rides they packed into such a small space. We forgot the camera so we didn't take any pictures today, we'll go back and get a few tomorrow with the rest of the ride tickets. In addition to the amusement rides they had the usual assortment of carnival games. The church also had a bunch of games aimed at younger kids like Henry and Samus. The highlight for me though was the elephant ears. Do you really need another reason to go?

The rides were provided by Skerbeck Brothers and they had a large Ferris wheel and a few other good sized ones. The Ferris wheel was a lot of fun for everyone but mommy. She was convinced the kids were going to jump out. Poor mommy, next time we'll leave her home. :-)

My Birthday

I had to get out of bed, paint, drive to pick up sammy, drive to get some stuff from the store, not happy. Is it really that much to ask to not have to get out of bed on your birthday? :-)

Mother's day

We spent the weekend celebrating Mother's Day. We spent yesterday with Melissa's parents. Today was at my mom's. I was rather amused that my mom and I both made Tomato Mince pie. It worked out okay though because it meant more for me. :-) Plus, Melissa's dad likes it so he's good for a piece or two when I make it.

Shrimp Massacre this morning :(

I'm not sure what happened. Everythng seemed fine last night when I went to bed. This morning when I got up the water was extremely cloudy and the shrimp were dead. It took several changes of water to get things somewhat normal. We had to wait out the rest of the cloudiness. The best theory we have is that one of the kids dumped something in the tank. We've had problems with them doing similar things before. There was also a rather incriminating can of cream soda sitting next to the tank. Hopefully, Otter and Anchovy will be okay and not harmed long term.

Melissa also apparently pulled out the non-java fern. I was going to give it more time to recover under the new light but I guess she didn't want to wait.

Flourescent Light for the tank

It is not a huge deal but we replaced the light on our aquarium with one that has a flourescent light. It looks nicer with the new light and is supposed to be make things easier on plants. We'll see what happens.

Meijer Garden's

We get free admission to Meijer Gardens this month through the children's museum. We walked all over the place. The kids especially liked playing with the water displays and getting soaked. We missed the butterflies exhibit but there were still still a ton of butterflies. Apparently, even though it ends on April 30th, there are usually some butterflies through the first week or two of May.
